Shokupan is a food truck that serves incredible breakfast sandwiches. It offers a wide variety of egg shokupan sandwiches served on Japanese milk bread, as well as food truck classics like fries, tater tots, and breakfast options. The menu technically is a Mediterranean with a South Asian influence. Shokupan offers more international cuisine. For breakfast, there’s traditional waffles and pancakes, but also three kinds of French toast made with shokupan, a Japanese milk bread that’s a staple at Hiyajneh’s downtown breakfast cart of the same name. The Middle Eastern breakfast menu includes ful madammas, arnabeet, labneh, hummus and sweet eggs, among other offerings. Crepes come in three varieties of sweet (blueberry, strawberry Nutellas and banana) and savory (chorizo, veggie and western).

The cheese, tater tots, and sauce were a great compliment to the sandwich. The whole sandwich was really tasty and really filling! Reviewers mention the generous portion sizes and friendly owner. The Royal Meats sandwich stands out with its tender meat, fresh eggs, and perfectly paired cheese and tater tots, making it both delicious and filling. I've bought the Royal Meat and was surprised by how big that sandwich was. Not just that, the service was fast with getting my order out.

Mixed Reviews
Despite some mixed reviews about unevenly sliced bread or seating close to a dumpster affecting the ambiance for some customers. Maybe they were having a bad day: bread unevenly sliced, off putting taste, stale avocado. Food was absolutely not as pictured/described. However, the only thing that I am not satisfied is that the seating area was close to a dumpster, which disrupts the mood personally speaking. That being said, I will continue to order pickups from this food truck via one of many partnered food delivery platforms.
The Visionary Behind Shokupan: Hitham Hiyajneh
Yallah Taco owner Hitham Hiyajneh opened the mobile restaurant in hopes of bringing new, different food options to Happy Valley. He just recently opened Shokupan, 317 E. Calder Way, a new food truck located behind his Yallah Taco location on College Avenue. Hiyajneh is also the owner of Underground Burger. Best part is that it's all halal.
Hiyajneh's Expanding Culinary Empire
Hiyajneh is expanding his culinary ventures in State College. Yallah Chicken & Taco will open at 1669 N. Atherton St., State College. Yallah Chicken and Taco will open soon at 1669 North Atherton Street, which formerly housed Bradley’s Cheesesteaks until this summer. This will be the third Yallah location for Hiyajneh in State College. He opened Yallah Taco at 217 McAllister Alley in 2018 and another Yallah Taco at 310 E. College Ave.
New Ventures: Cluck and Catch and Express Food Cart
Hiyajneh and a partner are going in equally on not one but two units in the Westerly Parkway Plaza. The first, named Cluck and Catch, will offer up Southern fried chicken and fish, rotisserie chicken and sides. Hiyajneh is adding an express food cart in front of his Lebanese-inspired Pita Cabana Grill, 334 E. College Ave.
Dulce Luca Cafe: A Sweet Addition
Dulce Luca Cafe, owned by Eman Ahmed and Hiyajneh, is now featuring new items such as pistachio konafa chocolate croissant, cake cans in flavors like banana pudding and pineapple and rice pudding where you can add your own topping. Dulce Luca is located at 216 E.

Fatoum: A Mediterranean and South Asian Fusion
Fatoum is located at 532 Westerly Parkway, State College. “Our menu technically is a Mediterranean with a South Asian influence,” Hiyajneh said. “We have more international cuisine. We’re trying to have a blended experience,” Hiyajneh said. “Carlos is the chef behind the whole thing. For the Indian food, he’s the guy,” Hiyajneh said. “Plus we actually make fresh naan. We have a naan oven, we have a tandoor oven. Hiyajneh’s late mother was also fond of Indian cooking, in addition to Middle Eastern fare, and it’s her nickname that adorns the new restaurant. “Her name is Fatima and her nickname was Fatoum,” Hiyajneh said. “Come and experience the food, and just be patient with us because it’s a new experience for us,” Hiyajneh said.

“It will have more variety,” Hiyajneh said. “It will serve food from Silk Road countries like Indian, Chinese, Persian and Mediterranean food,” he said. He plans on quality over quantity and adding little unique spins on old standards. For example swapping out dinner or sourdough rolls for Indian naan.
